You have to remove the account before you can set it up as POP, also. There is no such setting, and I don’t know how it worked before. There isn’t a half-POP, half-IMAP setup. You would have to configure the account on your Mac to be POP.
Based on our experience, you can only set one type of account in Outlook for Mac. But it’s still determined by your email provider, we’re not sure about the exact limitation. I suggest that export your email first, so that you will not lose them when your account is set up as IMAP account.
For the instructions, see: Export items to an archive file in Outlook for Mac. After that, import these files into the IMAP account. Then see if they can sync to the email server of your provider, so that you will still be able to access them in one account.
Another solution would be to switch to a Gmail IMAP account. You could configure it to automatically fetch new mail from the ISP email account into the Gmail inbox using Gmail’s mail fetcher feature per https://www.howtogeek.com/school/gmail-guide/lesson9/ .
